How Do I Make it Healthier?
If you’re consciously trying to get healthier food on your plate, this cheesy chicken and rice recipe gives you the perfect chance to do just that! You can add a lot more into the mix apart from just the canned corn that I’ve used. Throw in some pre-cut frozen veggies or freshly chopped ones- depending on what you have. Here are some good ideas to consider.
- Chopped spinach
- Diced bell peppers
- Diced carrots
- Diced zucchini
- Sun-dried or regular tomatoes
- Broccoli florets
- Sliced mushrooms
- Olives
- Green beans
- Peas
Adding in these veggies can get you all the healthy goodness and a nice crunch element in the recipe!
Can I Make it in a Pressure Cooker?
Yes! That’s a great option too, especially if you don’t want to opt for slow cooking. Your Instant Pot or pressure cooker should do just fine when it comes to whipping up this easy cheesy chicken and rice meal.
Just remember that the cooking time will be different.
Can I Use Regular Rice?
You totally can! I like to use the chicken flavored rice packs because they’re so much more convenient and add in a ton of flavor. Make sure you use long-grained rice and soak them at least 5-10 minutes before you add them to the crockpot. To add in more flavor, you can throw in some chicken stock seasoning mix or a pack of chicken soup mix too.
Tips to Make the Cheesy Chicken and Rice
And of course, you can never go wrong with some quick tips and tricks, right?
- Use a tender cut of chicken for this recipe. Chicken breast is always the best choice.
- Don’t forget to give the rice a quick stir mid-way through the cooking process. This will help keep it from getting burnt in the bottom.
Serving Ideas & Suggestions
The best part about this crockpot cheesy chicken and rice recipe is the fact that it is super versatile and a great meal in itself. You can serve it as is, and I’m pretty sure it will be a hit with everyone in the family.
If you want to go the extra mile, you can pair it with a side of pan-fried asparagus or green beans, glazed carrots, or some steamed broccoli.
