- 2 russet potatoes medium
- 3 slices bacon
- ½ c cheddar cheese shredded
- 2 stalks fresh chives
- 1-2 tbsp olive oil
- salt and pepper
Instructions
- Cook the bacon in a medium skillet over medium low heat, until crispy. When done, set on a paper towel to absorb grease, then break the bacon into small pieces.
- Wash the potatoes really well, then slice them into ¼ inch slices.
- Dice the chives.
- Lightly brush each of the potato slices with olive oil.
- Arrange potatoes in a single layer in the air fryer basket.
- Sprinkle them with a little salt and pepper.
- Cook at 400 degrees for 17-18 minutes, lightly shaking the basket once halfway through cooking.
- Top each of the potatoes with cheese, then bacon, then a few chives.
- Bake for an additional 2 minutes.
- Remove potatoes from the air fryer, and serve hot!
