I like to get creative with my meals, but sometimes simplicity is best, and all I want for dinner are some roasted veggies and a source of protein. The simple blend of herbs in this recipe really highlights the natural flavors of the carrots for an effortless side the family will love.
These carrots are easy to make on busy days, inexpensive, and don't take a lot of prep or planning. Using baby carrots makes this recipe even easier since you don't have to peel or chop the carrots.

You could try this recipe with other veggies, just make sure to adjust the cooking time accordingly!
I also like doing a vegetable medley with carrots. If you decide to do this make sure all the vegetables require a similar cook time so that some don't burn while the carrots are still cooking. Some great options to pair with the carrots are broccoli, cauliflower, brussels sprouts, and sweet potatoes.
What Other Seasonings Can I Add?
These carrots are made with a simple seasoning blend of ingredients most people have in their spice cabinet already. However, the best part about making these roasted carrots is that they are super versatile and can take on any flavor combination of your choosing.

Air Fryer Roasted Carrots

Ingredients
- 1 lb baby carrots
- 1 tbsp olive oil
- ½ tsp thyme
- ½ tsp oregano
- ½ tsp cracked black pepper
- ½ tsp salt
Instructions
- Preheat the air fryer to 380.
- Add the olive oil and seasonings to a medium size bowl, and stir to mix together.
- Add the carrots to the bowl, and toss to coat with the seasoning mixture.
- Add carrots in a single layer to the air fryer basket, and air fry for 15-18 minutes, tossing the basket half way through cooking.
