Fresh, tasty, and healthy strawberry cookies that will keep you coming back for more. These healthy strawberry cookies are NOT made with cake mix, but rather a customization of my standard sugar cookie mix.
In a large bowl, stir together flour, baking soda, sugar, and baking powder. Set aside.
In a small bowl, stir together egg, vanilla, and butter. Gradually blend in the dry ingredients.
Add in the strawberries, but prevent from over mixing them in.
Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
Bake 9 to 11 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
Notes
Do not melt the butter and add in hot. You just want the butter softened and at room temperature.If you can’t find the 18-ounce size of cake mix and can only find the 15 ounces, just add in ¼ cup extra of all-purpose flour.Store in an airtight container for up 3-days.
