Ingredients

  • 2 chicken breasts
  • 50 g broccoli florets
  • 7-10 cherry tomatoes, halved
  • ½ cup shredded cheese
  • 2 tbsp balsamic vinegar
  • 25 g butter
  • 2 tbsp soy sauce
  • 1 tsp Italian seasoning
  • A few fresh basil leaves

Instructions

  • Start by preparing the marinade. Mix the balsamic vinegar, soy sauce, salt and some crushed black pepper in a large mixing bowl.
  • Add the chicken into the marinade and give it a good mix. Allow this to rest for atleast 10 minutes.
  • Heat butter in a pan or a skillet and add the chicken. Let it cook for a few minutes on low heat and then flip it over.
  • Add the broccoli florets into the pan and allow it to cook for an additional 2-3 minutes.
  • Next, add the cherry tomatoes, and let it cook until the tomatoes soften a bit. You can also add a little more of the marinade at this point if you want some extra flavor.
  • When the chicken is almost done, top it with a generous sprinkle of shredded cheese and some whole or chopped fresh basil leaves.
  • Follow it up with a sprinkle of Italian seasoning and serve immediately!
