Easy One Pot Goulash

Ingredients
  

  • 1 cup pasta
  • ½ cup chopped tomatoes
  • ½ cup chopped onions
  • ½ tbsp chopped garlic
  • 1 tbsp Italian seasoning
  • 150 g lamb mince
  • 1 bell pepper, chopped
  • 1 ½ cup stock
  • 1 tbsp soy sauce
  • 1 tbsp tomato ketchup
  • 2 tbsp grated cheese
  • Salt and pepper to taste

Instructions
 

  • Start by heating oil in a pot, add the lamb mince and allow it to cook for 5-7 minutes.
  • Next, add chopped onions, tomatoes, bell peppers, garlic, tomato ketchup, soy sauce and the Italian seasoning into the pot and let it cook for 5 more minutes.
  • Now add the chicken stock and let it come to a simmer.
  • Add the pasta and allow it cook until it is around 90% done.
  • Take the goulash off heat and add the cheese. Let it rest for a minute or two before serving.
