Start by heating oil in a pot, add the lamb mince and allow it to cook for 5-7 minutes.
Next, add chopped onions, tomatoes, bell peppers, garlic, tomato ketchup, soy sauce and the Italian seasoning into the pot and let it cook for 5 more minutes.
Now add the chicken stock and let it come to a simmer.
Add the pasta and allow it cook until it is around 90% done.
Take the goulash off heat and add the cheese. Let it rest for a minute or two before serving.
